The Christmas time is a never-ending season for yummi food. 

We picked some of our favorite festive recipes to share with our loved ones.


Vegan blueberry and lime pie


Ingredients

For the base:
-2 cups of pitted dates;
-1 ½ cups of almond flour;
-3 tablespoons of coconut oil;
-Salt flower.

For the Filling:
-400gr of cashews (hydrated for at least 4 to 5 hours);
-1 can of coconut milk;
-1 cup shredded dry coconut;
-4 limes (zest and juice);
-1/2 glass of maple syrup;
-2 tablespoons of melted coconut oil;
-1 cup of frozen blueberries;
-2 tablespoons of coconut sugar;

Base preparation:
Grind all the ingredients in the processor until obtaining a homogeneous mixture.
Spread the mixture in a tart pan, pressing until it is very compact.
(Set aside).

Filling preparation:
Combine all ingredients except for the blueberries and coconut sugar in a food processor, blending well until obtaining a smooth and homogeneous mixture.
Remove 2/3 of the mixture into a bowl and set aside.
Add the blueberries and coconut sugar to the rest of the cream and process again, mixing well.
With the base already placed in the tart pan, add the cream with the blueberries and smooth it out until a leveled layer is obtained. Then add the other white cream and level again.
Place the pie in the freezer for two hours. Remove and decorate as you like, with cocoa nibs, dry fruit crisps, among others.
Whenever you want to serve, remove the desired portion and finish with lime zest.

Madeira's Honey Biscuits

Ingredients

  • 750 grams flour
  • 560 grams sugar
  • 2 eggs
  • 250 grams sugarcane honey
  • 35 grams ground cinnamon
  • 5 grams ground cloves

  • 15 grams ground nutmeg
  • 25 grams Baking Soda
  • Zest of 1/2 lemon
  • 95 grams Butter
  • 95 grams pork fat or butter
  • Almonds for a finishing touch

Mix all the ingredients (except the eggs and sugar cane sugar).
Once mixed, make a hole in the middle and add the eggs and the molasses / sugar cane sugar.
Knead the down again and again until it becomes smooth and no longer sticks to the bowl.
Leave in the fridge for 24 hours.
Roll the dough into balls.
Place the balls onto trays with non-stick paper.
Possible addition: place an almond on the cookie ball as a finishing touch
Leave in the oven at 150ºC for 30 minutes.
Store in a sealed container in a dry place. Can be stored for up to 6 months without losing quality.

"Leite Creme" - Portuguese Egg Custard

Ingredients

  • 1 liter of milk
  • 6 egg yolks
  • 200g sugar

  • 40g cornstarch
  • Peel of 1 lemon
  • Brown sugar, for sprinkling

In a saucepan, boil the milk with the cinnamon stick and lemon peel.
Slightly beat the sugar with the egg yolks and cornstarch.
When the milk begins to boil, remove the cinnamon and lemon and slowly add to the egg mixture, stirring constantly.
Put the mixture back in the pan where the milk was boiled and give it a mix with the blender to break up any cornstarch lumps.
Leave it on low heat until it thickens, stirring constantly.
Place it on a platter and burn to taste - just sprinkle with sugar and burn with a burner.

"Escangalhado" of potato and cod fish

Ingredientes

  • Potatoes
  • Cod Fish
  • Blond Leaf
  • Onions

  • Salt
  • Garlic
  • Cumin
  • Sprouts

  • Potatoes
  • Cod Fish

  • Salt

Cook some potatoes with cod, a blond leaf, salt and garlic. When it's all cooked, remove the blond leaf and turn the potatoes into puree and mix the cod already cooked and shredded. Braise the onions, another blond lead, 3 garlic cloves and cumins to your taste. Mix the shredded cod and puree already made into this braise and let it cook while mixing.

On a different pan cook the sprouts in water and when it's done, strain the water and braise them with 1 onion, 1 blond leaf and 3 garlic cloves. When it's tasty, serve the sprouts and the potato pure and cod mix and enjoy!

"Arroz Doce" - Sweet Rice Pudding

Ingredients

  • 3 cups whole milk (scalding)
  • 3 egg yolks
  • 1 cup rice (preferably Carolina short grain)
  • Powdered Cinnamon

  • 2 cups water
  • 1/2 tsp salt
  • 1 slices of lemon zest
  • 1 cup granulated sugar
  • 1/2 cinnamon stick

Start by bringing water, a cinnamon stick, and lemon peel to a boil in a sizable, sturdy saucepan.
Once boiling, introduce the rice and continue cooking on medium heat until all the water evaporates.
Pour in the hot milk and let it simmer for a minimum of 25 minutes on low heat, stirring occasionally.
Add sugar, stir, and cook for an additional 5 minutes. Turn off the heat.
While the mixture is cooling slightly, beat the egg yolks in a separate bowl.
Temper the eggs by gradually adding a few tablespoons of the rice mixture, mixing thoroughly.
Remove the saucepan from heat, and blend in the remaining eggs, ensuring the rice is not actively boiling. Simmer for approximately 1 minute.
Remove the lemon peel and cinnamon stick from the mixture.
Transfer the contents to a large serving platter or individual dishes.
Allow the dish to cool, then garnish with powdered cinnamon.
